- red bell peppers 2 tbsp
- cilantro 1/3 cup
- corn 1 tbsp
- kosher salt 1/8 tsp
- chili powder 1/8 tsp
- cumin 1/8 tsp
- vegetable oil 1/2 tsp
- red wine vinegar 1 tsp
INSTRUCTIONS
- Cook quinoa following the packages instructions. Let cool.
- Drain and rinse black beans, dice red bell pepper, and chop cilantro, then mix with corn.
- Once quinoa is cooled, mix all ingredients together and let chill for 30 minutes before serving.
