Ingredients Amount / Measure Notes
  • lean ground beef 12 oz
  • canned pinto beans low sodium 1/4 cup
  • canned diced tomatoes no salt added 1/4 cup
  • onions chopped 2-1/2 tbsp
  • green bell peppers chopped 1 tbsp
  • shredded mozarella cheese low fat 2 oz
  • seasoned bread crumbs 1/4 cup
  • pepper 1/8 tsp
  • oregano 1/8 tsp


INSTRUCTIONS


  • Combine all ingredients into a large mixing bowl and stir until all ingredients are fully incorporated.
  • Form meat balls using 2-1/2 tbsp of beef mixture for each. Place onto a baking sheet lined with parchment paper.
  • Bake at 350° F for 20 minutes or until internal temperature reaches165° F.

  • Using a #30 scoop, portion meat balls onto sheet tray, or 18 x 13inch tray, lined with parchment paper.
  • Bake at 350° F for 20 minutes or until internal temperature reaches 165° F. Hold hot for service.
