- kale 5 1/2 cups
- orange juice 1/4 cup
- kosher salt 1/8 tsp
- vegetable oil 2 tsp
- dried cranberries 2 tsp
INSTRUCTIONS
- Wash kale thoroughly then chop.
- Place chopped kale in a large mixing bowl and add orange juice and salt.
- Using your hands, massage the kale until it loses volume and turns semi-translucent and bright green, about 5 minutes.
- Mix in oil and dried cranberries. Refrigerate for 30 minutes prior to serving.
