Firecracker Carrots

Family Child Care

Ingredients Amount / Measure Notes
  • Carrots, baby, raw 1 lbs., 1 1/3 oz.
  • Vegetable oil, palm kernel 3/4 tsp.
  • Oil, sesame, salad or cooking 3/4 tsp.
  • Sambal Oelek 2 1/4 tsp.
  • Salt, table 1/4 tsp.
  • Spices, pepper, black ground < 1/8 tsp.


INSTRUCTIONS


  • In a large bowl, combine carrots, oil, and sambal. Mix until carrots are fully coated.
  • Pour in a sheet pan, or 18 x 13 inch pan, and bake in a 400° F oven for 18-20 minutes  or until carrots are tender but not mushy. Hold hot for service at 140° F.
