Curried Chickpeas

- garlic 2 tsp
- onion 1/3 cup
- red bell pepper 6 tbsp
- canned garbanzo (chickpea) beans 2 cups
- vegetable oil 2 tsp
- kosher salt 1/8 tsp
- black pepper 3/8 tsp
- cumin 3/8 tsp
- cinnamon 1/8 tsp
- curry powder 1-1/2 tsp
- water 1/2 cup
- canned diced tomatoes no salt added 1-1/2 cup
INSTRUCTIONS
- Mince garlic, onions, and peppers. Drain chickpeas and set aside.
- Heat oil, add garlic, and cook for 30 seconds then add the onions, peppers, and salt. Cook until soft.
- Add pepper, cumin, cinnamon, and curry powder. Cook for 2 minutes.
- Add water and bring to a boil. Reduce heat then stir in the chickpeas and tomatoes. Simmer for 20 minutes.
