  • Spices, chili powder ã…¤ 1/4 tsp.
  • Salt, table ã…¤ 3/4 tsp.
  • Tomatoes, red, ripe, raw, year round average diced 6 3/4 oz.
  • Bush's Blackeye Peas 111 oz ã…¤ 5 1/2 oz.
  • Corn, sweet, yellow, canned, whole kernel, drained solids ã…¤ 4 1/2 oz.
  • Onions, raw chopped 3 oz.
  • Peppers, sweet, red, raw diced 3 oz.
  • Coriander (cilantro) leaves, raw ã…¤ 1/2 oz.
  • Spices, pepper, black ground 1/4 tsp.


INSTRUCTIONS


  • Drain corn and set asside.
  • Dice tomatoes, red onions, and red bell peppers. Drain and rinse black eyed peas. Remove cilantro leaves from the stems, rinse and chop.
  • Make the dressing. In a large bowl, whisk together the oil, sugar, white wine vinegar, chili powder and salt.
  • Add tomatoes, black eyed peas, corn, red onion, bell peppers, and cilantro. Toss with dressing to combine.
  • Cover and chill until ready to serve.
