Black Bean and Corn Salsa

Ingredients Amount / Measure Notes
  • Coriander (cilantro) leaves, raw 2 tbsp., 2 2/3 tsp.
  • Onions, raw chopped, raw to prepared 1 tbsp., 2 7/8 tsp.
  • Peppers, sweet, green, raw chopped 1/3 c., 1 1/3 tsp.
  • Corn, sweet, yellow, canned, whole kernel, drained solids drained 1/4 #10 can
  • Beans, black, mature seeds, canned, low sodium undrained 1/4 #10 can
  • Seasoning mix, dry, taco, original 1 1/2 tsp.
  • Spices, cumin seed ground 3/8 tsp.
  • Lime juice, raw 2 1/4 tsp.


INSTRUCTIONS


  • Remove cilantro from stems, rinse, and chop.  Dice onions and green bell peppers.
  • In a large bowl, combine corn, drained black beans, taco seasoning, cumin, lime juice, salt and pepper. Add cilantro, onions, and bell peppers.
  • Refrigerate for 30 minutes before serving.  Adjust seasoning if needed.
