- tomato paste 3/4 tsp
- canned diced tomatoes no salt added 3 tbsp
- water 1/2 cup
- kosher salt 3/8 tsp
- chili powder 1-1/8 tsp
- garlic 1-3/8 tsp
- taco seasoning mix 1-1/8 tsp
- black pepper 3/8 tsp
- cumin 3/8 tsp
- chicken base low sodium 1/8 tsp
- tortilla chips 9.75 oz
- nacho cheese 4-1/3 tbsp
- salsa low sodium 2-1/2 tsp
INSTRUCTIONS
- Brown beef and onions together with oil over medium heat.
- Add tomato paste to beef mixture and allow to slightly brown, then add diced tomatoes. Simmer for 15 minutes.
- Add water and remaining seasonings. Simmer for an additional 20 minutes or until the internal temperature reaches 165°F.
- To serve, place 1/2 cup of beef mixture on tortilla chips and drizzle 1/4 of the warm cheese sauce on top. Serve salsa on the side.
