Apple Cinnamon Muffins

Ingredients Amount / Measure Notes
  • Wheat flour, white, all-purpose, enriched, bleached ‌ 3 3/4 oz.
  • Wheat flour, whole-grain, soft wheat ‌ 3 3/4 oz.
  • Sugars, granulated ‌ 1/4 c.
  • Sugars, brown packed 3 tbsp.
  • Leavening agents, baking powder, low-sodium ‌ 1 1/2 tsp.
  • Salt, table ‌ 1/4 tsp.
  • Spices, cinnamon, ground ‌ 1 1/8 tsp.
  • Egg, whole, raw, fresh ‌ 3/4 large
  • Vegetable oil, palm kernel ‌ 3 tbsp.
  • Milk, White, 1%, Low Fat, Gallon, Hiland Dairy, 13200 ‌ 1/2 c.
  • Vanilla extract ‌ 3/4 tsp.
  • Apples, raw, with skin (Includes foods for USDA's Food DistributionProgram) slices 2 tbsp.
  • Unsweetened Apple Sauce 6/10 ‌ 2 tbsp.


INSTRUCTIONS


  • Preheat convection oven to 350 degrees F or conventional oven to 375 degrees F.
  • Line muffin tins with paper cups and set aside.
  • In a small bowl, combine flour, sugars, baking powder, salt and cinnamon. Set aside.
  • In a mixing bowl or mixer using paddle attachment, beat eggs, oil, milk and vanilla until fully incorporated.
  • In saute pan, saute apples for 5 minutes until warm. Stir applesauce and apples into batter.
  • Portion batter into paper-lined muffin tins using #16 scoop or fill 2/3 of the way full.
  • Bake 20-25 minutes or until tester comes out clean. Cool and sprinkle with powdered sugar if desired.
